吃蜂蜜宜忌八問
坊間有「秋吃蜜,眾病消」的說法,從中醫角度來看,蜂蜜有潤燥功效,的確適合乾燥的秋季食用,不過蜂蜜並非人人適合吃,食用時亦有不少注意事項,吃之前先來了解一下蜂蜜小知識。

問1:蜂蜜有何功效?
答:蜂蜜性平,有補脾潤肺、潤腸及解毒功效,可紓緩因肺燥引起的乾咳及腸燥便秘等問題;亦有除心煩、改善食慾不振、口瘡的作用,尤其適合氣虛、血虛、陰虛、陽虛及血瘀體質人士服用。

問2:哪些人不適合吃蜂蜜?
答:對蜂蜜或花粉有過敏反應的人,脾胃虛弱、易出現胃脹及腹瀉的人都不宜多吃,因為蜂蜜有輕瀉作用。濕熱及痰濕體質人士都不適合,痰濕內熱再吃蜂蜜會引致痰多而封喉。另外1歲以下嬰兒亦不宜吃蜂蜜,因為消化系統尚未成熟,以免出現不良反應甚至中毒。

問3:蜂蜜價錢平貴功效上有分別嗎?
答:蜂蜜價錢高低一般取決於「單花蜜」還是「多花蜜」以及花期長短,「單花蜜」的蜜蜂只採一種花製造蜂蜜,如果該種花花期短的話,價格就會偏高。「多花蜜」又稱百花蜜,蜜蜂採集多種花蜜而成,價錢相對便宜。如果蜂蜜來自荔枝、山楂、枸杞等花種,蜂蜜會偏溫性;如果採自菊花、枇杷等花種,蜂蜜便會偏涼性。

問4:蜂蜜怎樣食用最好?
答:直接食用最好,尤其顏色較深色的蜂蜜,比淺色蜂蜜蘊含更多礦物質,食療價值較高。不過較深色的蜂蜜味道較濃,除了甜味還會有甘苦味,一般人不易接受,加入暖水沖服是常見食法。

問5:甚麼時間吃蜂蜜最好?
答:蜂蜜有潤腸作用,早上吃比較好。

問6:聽說蜂蜜怕鐵器,為甚麼?
答:因為蜂蜜裡含酸性物質,當與金屬接觸後蜂蜜就容易變質,所以不宜用金屬器皿及匙羹存取。

問7:已開封的蜂蜜需要放入雪櫃嗎?
答:純正蜂蜜本身是天然防腐劑,將瓶蓋栓緊,儲存在乾爽陰涼地方,一般來說不容易變質,但也要注意最佳食物用日期。

問8:蜂蜜可以煮食嗎?
答:可以的,但要注意溫度,因為高溫會破壞蜂蜜的營養成份,亦會令味道變酸。建議可以用攝氏60度以下的溫水沖泡,入饌時可以先關火,起鍋前才加入蜂蜜拌勻。

Honey is especially suitable for those with qi deficiency, blood deficiency, yin deficiency, yang deficiency and blood stasis body constitutions.

Q2: What type of people should not have honey?
A: Those who are allergic to honey or pollen and others with asthenic spleen and stomach or those prone to abdominal bloating or diarrhea should not have too much honey as it may cause indigestion and mild diarrhea. Also if you have damp-heat or phlegm and dampness body constitution with interior heat, then honey may increase the amount of phlegm and block your throat. Children under 1 should also avoid honey as their digestive system is not yet mature, avoiding honey can prevent adverse reactions or even poisoning.

Q3: Is there any difference in different priced honey?
A: The price of honey generally depends on whether it is a "monofloral honey" or a "polyfloral honey" and the length of flowering. The bees of “monofloral honey" use only one kind of flower to make honey. If the flowering period is short, the price will be higher. “Polyfloral honey" is from bees that collect a variety of floral honey and the price is relatively cheap. If the honey comes from lychee, hawthorn, wolfberry and other flower species, honey will be warm-natured; if it is collected from chrysanthemum, loquat and other species, honey will be cold-natured.

Q4: How is honey best served?
A: The best way is direct consumption, especially for dark honey as it contains more minerals than light honey. However, dark honey has a stronger taste. In addition to the sweet taste, it also has a bitter-sweet taste, which is some people do not like. It is common to mix honey with warm water to consume. 

Q5: When is the best time to eat honey?
A: Honey can moisten the intestine and it is better to eat in the morning.

Q6: Some say metal harms honey, why is that?
A: As honey contains acidic substances, honey is prone to deterioration when it comes in contact with metal. So you should use metal containers and spoons to store and handle honey.

Q7: Does opened honey need to be stored in the refrigerator?
A: No, honey itself is a natural preservative. Tightly screw the bottle cap and store it in a dry and cool place, and it should not go bad. Be sure to note the printed expiration date accordingly. 

Q8: Can honey be cooked?
A: Yes, but pay attention to the temperature, because high temperature will destroy the nutrients of honey causing a sour taste. It is recommended to mix it with warm water below 60 °C. Turn off the heat before adding it into the pot. Add honey and mix well before serving your dish.
